Try this dish as an appetizer or entree.  The addition of the spicy sausage makes this dish a extra treat. Serve along with french bread that has been sprinkled with cajun season. you can  also serve this over linguine pasta

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons minced garlic
  • 2 tablespoons minced shallots
  • 1 adobo pepper
  • 1 cup canned tomato sauce
  • 1 10 oz can chopped tomato with jalapenos
  • 1 tablespoon Cajun Seasoning
  • 1/2 teaspoon red pepper flakes
  • 1 pound mussels, cleaned
  • 2 ouncechorizo
  • 1 cup chopped green onions
    1. Melt butter in a skillet over medium heat. Swirl olive oil into melted butter. Cook garlic, shallots, sausage and tomatoes in oil and butter until shallots are translucent, about 5 minutes. Mix in tomato sauce,  seasoning, and red pepper flakes; stir until well incorporated. Cover and reduce heat to medium-low; allow to simmer for 10 minutes.
    2. Add mussels to the pan and cover tightly. Raise heat to medium-high and cook until all mussels have opened, about 10 minutes. Remove from heat, garnish with chopped green onions to serve. Discard any unopened mussels.
