
Peach-Blackberry Cobbler — Delilah’s Recipe Book
Sick of making the same old dessert, whether it be a cake, pie or cookies?
Here's one to try out! A recipe sent from one of Delilah's friends:
The blackberry bushes grow like weeds around my farm! I end up preserving a lot of them, or making pie, or, since my friend Dee Dee sent me this delectable recipe, I can see I’ll be making cobbler very soon…
Fruit mixture:
3 large ripe peaches, peeled and thinly sliced (or 3-4 cups frozen fruit, thawed)
2 cups blackberries (thawed if using frozen)
3 tablespoons flour (or more if fruit is exceptionally juicy)
3/4 - 1 cup white sugar (depending on tartness of fruit)
1/4 tsp. cinnamonCrumble topping:
1 stick (1/2 cup) cold butter, cubed
1 cup light brown sugar
1 cup flour
1 cup uncooked oatmeal
1/2 tsp. cinnamon
1/4 tsp. saltIn a bowl combine fruit mixture ingredients and set aside.
In a separate bowl combine sugar, flour, oatmeal, cinnamon and salt.
Add cubed butter and, using a fork or clean fingers, mix together until everything is incorporated and has a crumbled consistency.
Use a non-stick spray in a 9x9 glass baking dish, add fruit mixture and top with the delicious crumbles.
Admire your work and then bake in a 350° oven until fruit is hot and bubbly and topping is golden brown, around 1 - 1 & 1/2 hours.
Let cool for at least half an hour to thicken.Don't forget the vanilla ice cream, and enjoy!
