What You Can Do With Your Easter Eggs Now That Easter’s Over [LIST]
1. Egg Avocado Toast
Ingredients:
- 6 hard-boiled eggs
- 2 tablespoons cilantro
- 1/4 cup celery, minced
- 2 teaspoons Dijon mustard
- 2 teaspoons Sriracha sauce
- pinch black pepper
- 1/4 cup fat-free mayonnaise
- 4 slices whole grain bread
- 1 tomato, sliced
- 1/4 red onion, thinly sliced
- 1 avocado, cut into 12 slices
Chop eggs and put in with cilantro, celery, Dijon mustard, Sriracha, pepper and mayonnaise and mix well then put the egg mixture on the toast and place sliced tomatoes and onion.
Brown Rice Breakfast Bowls
- 2 cups of cooked brown rice
- 1/4 cup olive oil
- 1 teaspoon finely grated lemon zest
- 1/4 cup lemon juice
- 1/2 teaspoon each salt and pepper
- 8 hard-boiled eggs
Cook rice according to package directions. Stir in oil, lemon zest, lemon juice, salt and pepper. Meanwhile, place cold eggs in saucepan.
Curried Egg Salad
Ingredients:
- 1/4 cup bottled mayonnaise
- 3/4 teaspoon curry powder
- 1/8 teaspoon celery salt
- 3-4 drops of Tabasco, or to taste
- 3/4 teaspoon ground cumin
- 1 teaspoon Dijon-style mustard
- 1 tablespoon fresh lemon juice, or to taste
- 1 1/2 tablespoons bottled mango chutney
- 6 hard-boiled large eggs, chopped
- 1/4 cup finely chopped celery
- 3 scallions, chopped
