Who would of ever thought the cauliflower could taste so good mashed. It's an excellent substitute for mashed potatoes and you can find it anywhere and it's always on sale.  It's great if you are trying to reduce your waist size and add extra fiber into your diet. The parsnip gives it a little sweetness.  Steam your cauliflower and parsnips with chicken broth.

  • 1 head cauliflower, broken into florets
  • 1 parsnip, peeled and sliced
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • salt and pepper to taste
  1. Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the chicken broth to a boil over high heat. Add cauliflower and parsnips, recover, and steam until soft, about 15 minutes.
  2. Drain the vegetables. Mash using a hand masher or electric mixer. Gradually add milk and butter and mash to desired consistency.
