A salad is always refreshing and easy to make. This is one of my favorite healthy salads. Fresh made Mozzarella with fresh basil makes all of the difference. Purchase a quality olive oil from a local shop. They will be able to provide you with the best knowledge, so you can have the most flavorful  Tomato, Mozzarella salad.

  • 3 large tomatoes on the vine, sliced
  • 8 ounces fresh mozzarella cheese, sliced
  • 1/4 cup olive or vegetable oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  •  fresh basil leaves
  • On a large serving platter, alternate tomatoes and mozzarella slices. In a jar with a tight-fitting lid, combine the oil, salt and pepper; shake well. Drizzle over tomatoes and mozzarella. Sprinkle with basil.
