ICE BOX COOKIES
3 cups flour
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 cup shortening (margarine)
1 cup granulated sugar
1 cup brown sugar, firmly packed
2 eggs
1 teaspoon vanilla
1 cup nuts finely chopped
Sift flour with baking powder, soda and salt. Cream shortening with sugar thoroughly. Add eggs, vanilla and nuts, mix well. Add flour mixture in 4 or 5 portions. Shape each portion in a roll ¾ inch across, wrap in wax paper. Chill several hours or overnight until dough is stiff enough to slice. Cut slices 3/16” thick with sharp knife. Bake on ungreased cookie sheet in 375 degree oven about 12 minutes or until lightly browned.
Makes a lot of cookies.
